Thursday's Tip from the Green Housewife - Make Pancakes With Juicer Pulp

       In an attempt to conquer bronchitis, this week I decided to go on a "raw food feast" (not fast, because I can eat as much raw food as I like!) and have been using my 30$ Walmart juicer up a storm. The only problem with my 30$ Walmart juicer is that unlike 300$ juicers, it produces so much pulp that I don't know what to do with it all. Last year, I made yards of organic soil with juicer pulp, using a technique called "trench composting" (but that is another post!). I am not up to digging a trench right now, so I am trying to come up with other uses for all this good pulp.
        So tonight, with leftover grapefruit and orange pulp, I made citrus pancakes for my husband Pete. First I cooked bacon, so I could use the leftover grease to cook the pancakes in and conserve on butter. (I know that sounds incredibly unhealthy, but Pete loves it when I go on these "raw food feasts" because I can cook him whatever he wants as we are eating two different menus).



 Then I came up with the following recipe:
        3 cups of white flour
        2 Tbsp sugar (grapefruit is tart!)
        2 Tbsp baking powder
Mix together dry ingredients and add:
        3 cups of grapefruit and orange pulp
        1 cup milk
        2 eggs

Then I cooked about a 3rd of the batter in the bacon grease (I ended up having to use a little butter), which made 7 large pancakes, enough for Pete's dinner and breakfast tomorrow. Tomorrow I will make the rest of the pancakes and freeze them for later. I topped the pancakes with butter and homemade marmalade. Pete said they tasted fluffy and citrusy. I tried not to envy him.

  1. Hmmm, that's a tough one, lol. I have a lot of pulp using my $200 juicer too. I've thought of adding the pulp to soups, muffins and loaf breads. I haven't actually tried it yet.

  2. Joyful - that is good to hear - no need for me to upgrade then :). I use the veggie pulp as base for soup, and I've used carrot and apple pulp to make carrot/ apple bread (even used yam pulp for this before!)

  6. I am on juice too. It's al I can manage - I have an upset stomach. Our chickens usually get the pulp, but I love your ideas, and am looking forward to trying them when I feel a little stronger.
